Batidos de Blueberry

Batidos-de-Blueberry Ingredients:

  • 2 tablespoons frozen piña colada mix
  • 1 cup fresh or frozen blueberries
  • 3/4 cup milk
  • 4 ice cubes

Directions:

  1. In a blender, combine the piña colada mix, blueberries, milk and ice. Blend 30 seconds.
  2. Pour smoothie mixture into two glasses.
  3. If desired, garnish each with a slice of star fruit and serve immediately.

Quick notes: Servings: 2 child-sized servings or 1 adult serving

Berry Blue Smoothie

Ingredients

  • 2 cups fresh or slightly thawed frozen blueberries
  • 1 6-ounce container lowfat vanilla or other flavored yogurt
  • 1 cup fruit juice, such as orange, pineapple or apple
  • 1 tablespoon honey or sugar, more or less to taste

Instructions

  1. In the container of an electric blender, place blueberries, yogurt, juice and honey
  2. Whirl until smooth
  3. Serve immediately

Blueberry Almond Butter Smoothies

Ingredients

  • 1 banana, peeled
  • 1 cup frozen blueberries
  • 1/2 cup almond butter
  • 1/2 cup plain yogurt
  • 3/4 cup almond milk
  • 3 dates, pitted and quartered
  • 1 cup ice, or as needed

Instructions

  1. Combine all ingredients in a blender; purée on high speed until smooth. Add a few ice cubes and blend until it reaches your desired consistency.

Blueberry And Mint Spritzer

Ingredients

  • Blueberries, fresh or frozen: 3 cups
  • Simple syrup: 1 cup
  • Lime juice: ½ cup
  • Lemon zest: 2 tsp
  • Mint leaves, torn: 1 cup
  • Club soda: 4 cups
  • Vodka (optional): 8 fl. oz
  • Blueberries, fresh: 1 cup

Instructions

  1. Make the blueberry base: Combine the first four ingredients in a small saucepan and bring to a boil
  2. Remove from the heat and add the mint leaves
  3. Stir with wooden spoon to release the mint aromas
  4. Chill completely and strain out solids into a container by pushing on the blueberries to extract as much juice as possible
  5. For each drink: Combine 3 oz of the chilled blueberry base in a shaker with ½ cup ice cubes, 1 fl oz.
  6. Vodka if using, and shake to muddle and strain into a chilled glass
  7. Add 4 oz. club soda
  8. Garnish with a few blueberries and a mint leaf
  Yield: 8 (8 oz.) drinks

Blueberry Mojito

For a twist on a classic with an invigorating kick, look no further than this fabulous Blueberry Mojito.

Ingredients

  • Fresh mint leaves: 1 cup
  • Fresh lime juice: 1 tablespoon
  • Sugar: 1 teaspoon
  • Blueberries, fresh or frozen: 4 tablespoons, divided
  • Lemonade: ½ to ¾ cup
  • Soda: splash
  • Light rum: 1 ounce
  • Dark rum: ½ ounce
  • Mint sprig for garnish
  • Lime slice for garnish

Instructions

  1. In a tall 16-ounce glass, add mint leaves, lime juice and sugar
  2. Mash the ingredients with the back of a spoon or a “muddler” until fragrant
  3. Add 2 tablespoons of the blueberries and mash until juicy
  4. Fill the glass three-quarters with ice
  5. Add lemonade until the glass is two-thirds full
  6. Add splash of soda, light rum and remaining blueberries, stir
  7. Slowly pour dark rum into the drink so it floats on top
  8. Garnish with a sprig of mint and slice of lime
  9. Serve immediately

Blueberry Margarita

Ingredients

  • Blueberry puree: 2 ounces
  • Tequila: 2 ounces
  • Orange liqueur: 1
  • 5 ounces
  • Fresh lime juice: 1
  • 5 ounces
  • Sugar: 1 teaspoon
  • Coarst salt for glass rim
  • Fresh blueberries for garnish

Instructions

  1. In cocktail shaker, combine blueberry puree, tequila, orange liqueur, lime juice, sugar and ice
  2. Shake thoroughly
  3. Run a cut lime along the serving glass rim
  4. Place glass rim in salt
  5. Pour shaker contents into glass
  6. Garnish with fresh blueberries
  7. Serve immediately
  Yield: 1 portion or about 7.5 ounces
